Grilled Chicken Wings with Teriyaki Glaze, Foil Potatoes, Cucumber-Sesame Salad, and Coriander Quark
Star chef Robin Pietsch, a culinary sensation from Saxony-Anhalt, has shared a new grill recipe that is sure to delight your taste buds. This recipe serves two people and is available on our website.
Ingredients:
- For the chicken wings: Chicken wings (500-600g, cleaned), sweet paprika powder, garlic, salt, black pepper, brown sugar, neutral oil, teriyaki sauce, soy sauce, honey or maple syrup, rice vinegar or lime juice, grated ginger, and optional chili.
- For the teriyaki glaze: Teriyaki sauce, soy sauce, honey or maple syrup, rice vinegar or lime juice, grated ginger, and optional chili.
- For the coriander quark: Curd cheese (40% or to taste), fresh coriander, organic lemon or lime (zest & some juice), salt, pepper, and optional olive oil.
- For the foil potatoes: Large waxy potatoes, olive oil, salt, coarse sea salt, fresh rosemary or thyme, and aluminum foil.
- For the smashed cucumber salad with sesame: A large salad cucumber, soy sauce, rice vinegar, toasted sesame oil, honey, toasted sesame seeds, fresh coriander or mint (optional), chili, and optional fresh herbs.
Preparation:
- Marinate the chicken wings: Mix together sweet paprika powder, garlic, salt, black pepper, brown sugar, and neutral oil. Coat the cleaned chicken wings in this mixture and marinate for at least 30 minutes (preferably longer) before grilling.
- Prepare the teriyaki glaze: Combine teriyaki sauce, soy sauce, honey or maple syrup, rice vinegar or lime juice, grated ginger, and optional chili. Set aside.
- For the coriander quark: Mix curd cheese, fresh coriander, organic lemon or lime (zest & some juice), salt, pepper, and optional olive oil.
- Cook the foil potatoes: Wrap halved or whole potatoes in aluminum foil, rub with oil, salt, and rosemary or thyme. Cook on the grill or in the oven for 30-40 minutes.
- Prepare the cucumber salad: Smash the cucumber, mix with soy sauce, rice vinegar, toasted sesame oil, honey, toasted sesame seeds, fresh coriander or mint (optional), chili, and optional fresh herbs. Let it marinate for 10 minutes before garnishing with sesame and herbs.
- Grill the chicken wings on medium heat for approximately 15-18 minutes, turning once, and brush with the teriyaki glaze before serving.
